I just wanted to share how easy it is to make pancakes without eggs or milk! I'm not a huge pancake fan..so I probably won't be making these very often. However, it's SUPER easy. Who needs those stupid eggs and milk anyway?
Ingredients
- 1 Cup flour
- 1 Tbsp. Sugar
- 2 Tbsp. Baking powder
- 1/8 tsp. salt
- 1 Cup soy milk (I understand if you're still drinking milk, you probably won't have this on hand, but I highly suggest it. I hate the taste of milk, but love the taste of vanilla soymilk--even the light version)
- 2 Tbsp. Vegetable oil
Ewww any kind of soy milk is yucky! But I've been using vanilla almond milk (sweetened or unsweetened) and that's pretty good. I wouldn't just drink it out of a glass, but then again I wouldn't have done that with cow's milk either. I will have to try these as Tyler LOVES "faffles" (aka waffles, but really he means pancakes since that's what I make).

I do like almond milk...rice milk is pretty good too. And I'm sure you could use any of those options in this recipe. I'll have to switch it up sometimes. Since I'll be having a lot of soy based products now. One thing I love to do with soy milk is throw it into a smoothie. I got a personal smoothie maker from mom for christmas. I have a blend of fruit ready in the freezer. I just pop some of it in the little blender add some soy milk and a little applesauce, blend and done! Super yummy and good for breakfast.
ReplyDeleteSo I just made these and they were good...well just as good as regular pancakes. Add the sweet syrup and you're good to go!
ReplyDeleteOne of my favorite tricks is to use apple sauce in place of oil in muffins and pancakes. That would work great for this recipe!
